Pad Thai

Have you ever been in the mood to get take-out but then decide to make a healthier version instead?

Tonight I wanted Pad Thai, probably because I've been stuck in the house all day potty training (Well, trying!). I think moving less makes you want gross food. Does that happen to you too?

I decided to make a similar version with hand-churned organic peanut butter, rice fettucine, organic chicken, and a stir-fry of organic baby bok choy, organic yellow bell pepper, organic shredded carrots, purple cabbage and a little special dressing, and spices of course.

The big test is giving it to any child. Well, he loved it, as did I! It tasted like a less-sugary version that wasn't going to make us feel bloated and sick afterward. Perfect! I can't wait to include all of these fabulous healthy recipes in a book someday!
