I haven't made shrimp in awhile, and I didn't want to look at a recipe. I just wanted to let my creative juices flow and use the food I already had in the house (Don't you hate having to go food shopping in order to make a certain recipe?).
In addition, I had guests coming over and wanted to make a meal I thought everyone would enjoy. Yes, there are times that I make meals that the average American would call "too healthy," so I wanted to create dishes that were both healthy and tasty, while also having nice presentation.
Using a bag of frozen shrimp, I made a cheesey, veggie, shrimp concoction that turned out super yummy!
A bit of coconut oil, shrimp, steamed peas, carrots and green beans, goat cheese, homemade tomato sauce, and a few added spices created a flavorful, high-protein main entree with healthy fats.
I also cooked a pot of organic sweet potatoes and carrots and created a great mash as a side dish.
Adding the shrimp and potato carrot mash to a plate of sauteed bok choy, onion, tomato, and broccoli gave everyone a fiber-rich (filling!), high-antioxidant complete meal.
