After apple and pumpkin picking with my family over the long weekend, I searched for a "healthy apple crisp" recipe, and I found one from SparkPeople.com. As many of you already know, I always change recipes to be even healthier without giving up flavor.
To show you the original recipe and the modifications I made, I have included the recipe below, with my comments in red.
Please post any questions/comments below, and I look forward to hearing your feedback! xoxo
This is what ours turned out like, and here's another photo...think my son really wanted some? YES! Aaah those innocent eyes... delic...
And one to show how badly he wanted it when I said he just needed to take one pic before he got a piece ;) CHEEEEESE!!!
Apple Crisp
Number of Servings: 9
This apple crisp is sweet and simple to prepare, but uses very little added sugar.
I doubled the recipe and used both red and golden organic apples. Choose organic when possible!
Ingredients:
3 medium baking apples, cored, sliced thin
1 tsp cinnamon – I choose to pour instead of measure with cinnamon!
2 Tbsp sugar – 4 packets of stevia instead
2 Tbsp flour – teff flour instead
Topping:
1 cup quick oats – When doubling recipe, 1 cup organic quick oats and 1 cup organic brown rice flakes.
1 tsp vanilla
1/2 tsp cinnamon
1/4 cup brown sugar – ¼ cup dark brown sugar (Don’t double just because you’re doubling the recipe!)
Directions:
Mix first four ingredients and place into 9-inch (square or round) baking dish.
In small bowl, mix Topping ingredients until crumbly. Sprinkle topping over the apples.
Bake at 325 degrees until apples are soft and topping is golden brown (about 30 minutes).
