I have found eggplant to be my "difficult food," or my "goal food" since I've always found it difficult to make eggplant well.
But this time I baked eggplant and it came out delic!
After cutting a large eggplant in half and removing the seeds, add tomato sauce, a sprinkle of cheese, and fresh parsley. Then bake at 375 degrees for about a half hour (30-40 minutes is ideal), and enjoy!
My version consisted of a delicious tomato sauce and dairy-free cheese, made of tapioca!
