My son's birthday is this week, and as a working mother, I find it difficult to not be able to surprise him at school with a birthday cake/song. So the next best thing for him to share with his friends at school that I can bring that morning? 
CUPCAKES!

I just can't bring myself to buy the sugary, white flour, preservative-rich store bought cupcakes, and I can't make regular cupcakes either. 
So what did I do? 
I made healthy banana chocolate chip muffins and just added regular frosting and sprinkles on top to add some fun and "regular taste" for the children who aren't used to healthier foods. My son is SUPER excited!!
* I also kept heart-shaped muffins without frosting for us at home.
We also made homemade peanut butter cups - super tasty and not difficult! We'll keep these at home as an after-dinner treat that we can keep in the fridge or freezer so they will last awhile.
