A friend slept over this weekend and I wanted to make her a nice breakfast. Sometimes it's tough because I feel like I eat differently than many Americans (no eggs and bacon with white toast here!), but I was happy to realize that my friend would enjoy and appreciate a nice healthy meal at my home.
While she cut the avocado, I chopped the organic orange and red peppers and placed them into a pan to heat up a bit.
She opted for sprouted multigrain bread, while I chose the millet chia gluten-free bread. A bit of goat butter on the bread, and a circle cut out in the middle to place the eggs, I heated the bread a bit as well. A couple of cracks and the eggs were placed in the holes of the bread.
I then poured the peppers on top of the eggs, added a bit of veggie chive goat cheese from the farmer's market onto mine, and flipped the pieces of bread just a couple of minutes later.
Easy breakfast, nice presentation, and a good feeling knowing we're treating our guests well - enjoy!
