I went apple and pumpkin picking with my son this past weekend and we had a blast!
After buying a large bag of apples, I realized we needed to make several dishes with apples this week ;) I asked my son what he would like to make first and he exclaimed, "Apple Cupcakes!!" Sure! But of course we'd make them healthier ;)
I found a recipe for gluten-free muffins and made changes to it (of course!) (original grain free muffin recipe: http://www.texanerin.com/2013/09/apple-muffins.html). I had leftover batter and decided to make an extra loaf with diced apples and apple pie spice on top as well. We originally doubled the recipe to have a whole bunch of muffins!
I wanted to make the muffins dairy-free as well as gluten-free, so instead of using Greek yogurt, I used sheep yogurt, and instead of sour cream used Tofutti Ricotta Cheese and a little applesauce.
My son doesn't love coconut so I used gluten-free multipurpose flour instead of coconut flour.
I also lessened the amount of sweeteners of course ;) and used half honey and half agave, with a little bit of organic pure cane sugar. And I didn't have ginger, but gosh that would've been an added health benefit!

The apples freshly picked are so sweet and juicy. I can't wait to make more recipes this week!
