Fall Side Dishes

The other night, I made a delicious dinner of chicken with "soup as a sauce" (softens the chicken!), kale and swiss chard, and squash.

Swiss chard, kale, fresh cranberries, and a drizzle of macadamia nut oil, baked at 350-375 degrees until soft with a bit of a crunch on top. If you need to "de-bitter" the cranberries a bit, add a drizzle of agave on top after baking.

 And this side dish was super quick and tasty:
 
Squash, goat cheese, and fire roasted tomatoes...yum!


Even my 3-year old loved it!
