I attempted to make "scary muffins" with my son a couple of night ago, muffins that would look scary but taste great...
But...
BOO.... (and not in the scary Halloween way)
Of course I wanted to make the muffins healthy too of course, so in order to achieve "SCARY, TASTY, AND HEALTHY," I attempted at modifying recipes to make the perfect googly green-eyed monster muffin. I think I'll keep trying ;)
I FINALLY found a great organic stevia powder that, for once, didn't come in tiny packets. It was green...perfect for my muffins! Well, it tasted more "green" than sweet, so it didn't do the job.
I added a mix of gluten-free flour, organic eggs, organic sliced almonds, organic pumpkin, organic fresh cranberries, organic chocolate chips, and banana for sweetness as well. Minus the green stevia powder, I think the muffins would've been dynamite.
