Pumpkin Chocolate Goji Berry Cookies

(gluten and dairy free without the frosting)

You can make these for any holidays, adding just a smidge of frosting with colored sprinkles on some for the holiday feeling and for those who are used to "normal" cookies and like a sweeter taste. I added Peppermint frosting with blue and white sprinkles to some of these for Hanukkah, which starts later this week.

Serving size is about a dozen

Ingredients

1 cup any type of gluten-free flour
1 cup of oat flour
1 teaspoon baking soda
3/4 cup Xylitol
1tb brown sugar
1 can of organic pumpkin
1 small container of organic applesauce
2 whole eggs
1 teaspoon organic vanilla extract
a few handfuls of various types of chocolate chips (dairy free or not) and chocolate covered goji berries

Directions

Preheat oven to 375 degrees.

In a large bowl, pour gluten-free flour, and add baking soda.

In a separate bowl, add Xylitol, brown sugar, organic pumpkin, applesauce, eggs and vanilla extract and mix together.

Add the wet ingredients to the dry ingredients and mix. Add oat flour and mix. Pour in chocolate chips. Stir until combined, don't overmix.

Spray baking sheet with organic coconut oil spray. Scoop onto baking sheet.

Bake about 20 minutes.

Makes between 10 and 20 cookies.
