What to do...what to do on such a festival of a day!
So what did I do? I took my son to the food store to buy different ingredients to make a great meal for Cinco De Mayo!
We decided to create tacos. First, he wanted chicken and bean tacos, but we ended up switching it to bean tacos with scallops and chilean sea bass. We used blue corn tortilla shells. I added a little dairy-free cheese to mine, and we also had a stir-fry of mixed veggies, including red pepper, purple cabbage, and bok choy with coconut oil. I also added a little kalemole to my dish.
As we ate our meal, we kept exclaiming how delicious each part of the meal was. Delish!!
